The 400 level seminar, Food Ethics, class presents, Community Dinner.

“You are what you eat” is a quote most of us are familiar with. Thought to be authored by the French gastronome Anthelme Brillat-Savarin, the statement itself is often adapted to call attention to consumer habits when it comes to food, but might be better served to understand the intimate link between food as not simply a system but one of self-identity in human culture. It is a statement not to be taken literally, but to be an invitation for one to critically examine the choices one makes, or doesn’t make, when it comes to food.

In this course, students will engage with four principles of ethics: beneficence, nonmaleficence, autonomy, and justice. These principles are subjugated by the biomedical industry that, through policy, dictate our modern food system. These topics will range from, food access, ecological impacts, food justice, human nutrition, production and distribution, consumer habituation, and economic and cultural impacts.

Suggested Donation $10/plate. All who live in greater Craftsbury are welcome.
