This weekly seminar provides an opportunity for exploration of the foundational philosophies of the Sterling Farm, as well as delving into our local food systems. Student assignments will provide the basis for an interactive discussion or exploratory exercise, led by one of the summer ag faculty each week. Topics addressed will include the following: humane handling of livestock; the ecological basis of grazing management systems; the French bio-intensive system; the Nordell's bio-extensive system; the history of the Organic movement; organic certification of livestock and crop systems; Accepted Ag Practices (protecting environmental quality on the farm); Marketing farm products (farmers markets, CSA's, restaurants, wholesale); Local processing of value added farm products.
